Chocolate Peanut Butter Fudge


  • 20 Natural Delights® Medjool dates, pitted and chopped
  • ⅓ cup smooth peanut butter
  • 2 tsp. vanilla extract
  • 1 tbsp. cocoa powder
  • 1 tsp. espresso powder
  • ½ cup dark chocolate
  • ⅓ cup chopped peanuts


  1. Spray a 23 cm x 23 cm baking tin with cooking spray. Line the tin on the bottom and sides with parchment paper, pressing it into the oil. Set aside.
  2. Place the dates, peanut butter, vanilla, cocoa powder and espresso powder in the bowl of a food processor. Pulse for 2-3 minutes or until smooth. Spread the mixture into the lined pan evenly.
  3. Place the chocolate in a heatproof bowl over a small saucepan of simmering water to melt, stirring occasionally. Pour the melted chocolate over the fudge mixture and spread evenly. Sprinkle the top with chopped peanuts. Place the fudge in the refrigerator to firm (for at least one hour) before cutting and serving. For best results, cut with a hot knife.
  4. Store in an airtight container in the refrigerator.
