Medjool Date Bites


  • 2 cups Natural Delights® Medjool dates

  • 1 large red apple such as Lady Williams, Cripps Red (Sundowner) or Eve

  • Juice of ½ lemon

  • 113 g semi-hard cheese such as Manchego, Cassini, Romano or Gruyere, sliced.

  • 85 g Prosciutto, thinly sliced, cut into 5 cm pieces

  • 1 cup arugula leaves


  1. Using a small knife cut a slice in one half of the date lengthwise. Discard pits.

  2. Core and quarter the apple. Slice each quarter into thin slices. Sprinkle with lemon juice.

  3. Fill each date with a torn half or third of a slice of cheese and a sprig of arugula.

  4. Wrap date with a small piece of prosciutto. Place on an apple slice.

  5. Arrange on a serving platter. Top with cracked black pepper, if desired.
