PB and Date Star Sandwich

PB and Date Star Sandwich


  • 1 cup (240 g) peanut butter 
  • 8 dates, pitted and roughly chopped 
  • 1 tsp. vanilla 
  • ¼ tsp. salt 
  • 10 slices of Farmhouse white bread 
  • 10 strawberries 
  • 10 blueberries


Place the peanut butter, dates, vanilla and salt in a food processor. Pulse until a smooth and spreadable consistency. If needed, add a bit of canola oil to loosen the mixture slightly. 

Spread the mixture over 5 pieces of bread. Top with the remaining 5 pieces of bread. For best results, chill in the refrigerator for at least 30 minutes. 

Cut 2 star shapes from each of the sandwiches with a cookie cutter. 

Use a small skewer or wooden toothpick to add the fruit. Poke the skewer or toothpick first through a blueberry, then a strawberry, and then into the center of the star sandwich.
