
1 1/3 cup water
1 cup quinoa
1/2 cup tinned chickpeas, rinsed and drained
1/2 cup halved grape tomatoes
1 15 cm piece of English cucumber, cut in half and thinly sliced
1/4 cup fresh cilantro, chopped
6 Natural Delights Medjool dates, pitted and chopped
3 green onions, thinly sliced
3 tbsp. olive oil
3 tbsp. fresh lemon juice
1/3 cup crumbled feta cheese
Bring the water and quinoa to a boil in a medium saucepan. Reduce heat and simmer, covered, for 12 minutes. Remove from the heat and let stand for 10 minutes. Fluff with a fork and let cool to room temperature about 10 minutes.
