Vanilla Medjool Date Balls


  • 1 cup Natural Delights Medjool dates, pitted and chopped (about 10 dates)

  • 1/2 cup orange juice

  • 1/4 cup butter

  • 1/4 cup packed brown sugar

  • 1 tbsp. vanilla extract

  • 1 1/2 cup chocolate cookie crumbs

  • 1/2 cup sweetened flaked coconut

  • 2/3 cup caster sugar


  1. Line a baking sheet with parchment or wax paper.

  2. Bring the dates, juice, butter and brown sugar to a simmer over medium heat and cook for about 12 minutes or until very soft and thickened, stirring occasionally. Stir in the vanilla; set aside to cool completely.

  3. Stir in the cookie crumbs and coconut. Using a rounded 1 tsp. measuring spoon, scoop out the mixture and roll into balls.

  4. Place the sugar in a shallow bowl. Roll the balls in the sugar until completely coated and then place on prepared baking sheet. Repeat with the remaining mixture.

  5. Cover and refrigerate for at least 2 hours or until firm. Package in single layers in an airtight container or cookie tins. May be refrigerated for up to 3 weeks.
